Easter Cookies | Tanya Burr's Recipe







Hi guys!!

Seen as today is Easter, Yesterday me and Tony decided to make some Easter cookies. We followed Tanya Burr's recipe as the are so delicious. To make the cookies more Easter appropriate instead of adding chunks of dairy milk we decided to add crushed mini eggs and also mini cream eggs cut in half. If you would like to know how we made these delicious cookies then read below. 
Firstly pre-heat the over to 200 degrees celsius and line your baking tray with baking paper.
The ingredients to make these cookies are:
300g Caster sugar
200g Butter
1 Large egg
75g Coco powder (we used Cadburys hot chocolate powder).
275g Self Raising Flour
Dash of milk.
1 Packet of Cadburys Mini Eggs
1 Packets of Cadburys Mini Cream Eggs

Firstly we measured out all the ingredients into bowls just to make the job a little easier.
We then added the butter and caster sugar into a large bowl and creamed them together. After they are creamed together, add the egg and whisk it.
Make sure all of this is fully combined. We combined start to add the dry ingredients. Tip them into your bowl and use a wooden spoon to mix this all together. You may need to use your hands. If the mixture is a bit dry add the dash of milk. We literally added a quarter of a tea spoon.
Empty the mini eggs into a sandwich bag and crush them using a rolling pin. Cut in half all of the mini cream eggs. Once you have done these steps, add them into, the cookie dough and bind them all together. When the chocolate and cookie dough is mixed together properly or to your satisfaction, you can then roll the dough into golf ball sized balls and place on a tray. The tray must have baking paper on it otherwise the cookies will stick and break. When rolling the cookie dough into balls, we tried to make sure each piece has a bit of cream egg in it. Don't want people to feel left out :).
Place the cookies in the over for 11 minutes. We proabbly only need to leave them in for 8 minutes because we have a fan assisted oven. Leave the tray on the side to cool for 30-45 minutes. They cookies may still be super soft but once they have been taken out of the oven they are still cooking on the inside so don't put them back in the oven!! otherwise they may burn. 
Once cool, remove them from the baking tray and enjoy!!
